For Chef Tim Cocheo, food has always been about bringing people together. Trained at the French Culinary Institute in New York City, he pairs classical technique with the rustic traditions of Italian and Alpine cooking — and the ingredients and seasons of Vermont. After serving as Executive Chef at Seesaw's from 2018–2022, Tim has come home to a place that mirrors his own philosophy: great food, libations & frivolity.

Located just below the main dining room, Bootlegger’s Tavern is where the evening slows down. Comfort-food classics served family style — lasagna, chicken parm, prime rib — in a warm, unhurried setting with its own bar.

Johnny Seesaw's doesn't have a dedicated children's menu, but we can prepare simple housemade pastas in children's portions on request. The Hut and Bootlegger's Tavern are both family-friendly with casual options.
